If I could only pick one food to eat for the rest of my life, I'm going to pick this easy and delicious veggie pizza. Moderation would go out the window, but I'd pick it anyway.
My favorite dough for this pizza is my quick and easy pizza dough. Find the recipe for the dough here. Even if you've never made a homemade pizza before, this will boost your confidence. You can always count on it turning out the same each time. It's a thick fluffy crust.
Onto the toppings. I love to load this up with as many veggies as I can. I go heavy on the broccoli, onion, and spinach. I like to roast garlic gloves covered with olive oil in my air fryer. I add them to the pizza whole. I love a good bite of fresh garlic. I don't know about you- but I can definitely taste a difference between a jar of minced garlic on a pizza vs. roasted fresh garlic. The jar of garlic can taste bitter to me. The sundried tomatoes add so much bold flavor. I think sweet peppers would be absolutely delicious on here, too.
Ingredients for the toppings:
- 1 Cup roasted garlic cloves
- ½ Cup sundried tomatoes
- 1 small sweet onion
- 1 Cup broccoli
- 3 Cups spinach
- A dash of lawry's garlic salt and crushed red pepper
- 2 Cups mozzerella cheese
- 1 Cup cheddar cheese
Instructions for toppings:
- Start by roasting your garlic cloves. I do this by putting them in a glass container covered in olive oil. Air fry at 325°F for 12-15 minutes or until tender and a little browned on top.
- Now chop your sundried tomatoes, onion, and broccoli up however small you like
- Sauté them in some olive oil or butter until tender and starting to dry out. I have also sauteed them in the oil from the sundried tomatoes.
- While they are sautéing chop up your spinach and throw it in the last minute to wilt.
- I season it all with a little lawry's garlic salt
- Add some your cheese- measure it with your heart
- Veggies are ready to go on the pizza add the rest of the cheese on top
Prepping your veggies:
Fresh roasted garlic cloves- I take a handful of these and put them in a glass dish covered in extra virgin olive oil in my air fryer at 350°F for about 12-15 minutes. They are done when they are turning a little golden in color and they are soft. They are so delicious that you could just eat them without even putting them on the pizza. You're going to have to practice a little self-control. It will be worth it.
Broccoli, onion, spinach and sun-dried tomatoes. I know tomatoes are not technically a veggie but they are a must have for this pizza! I use a little olive oil and sauté the onion, broccoli, and sundried tomatoes until tender and a little bit dried out. I like to add lawry's garlic salt and for the last minute or so add in some fresh chopped spinach. I use about 3 cups of spinach. It wilts down to nothing.
Now your toppings are ready. The key was easy and delicious veggie pizza.
Assembling your Pizza
I keep the edges of my dough a little thicker because I love a good crust. I go in with a little lawry's garlic salt and crushed red pepper flakes to sprinkle all over the pizza. I add some mozzarella and then I put my veggies on and top with a little bit of cheddar.
