    Pizza Soup in 30 Minutes

    This pizza soup in 30 minutes is exactly like it sounds. Soup that tastes like pizza that can be on the table in 30 minutes. This recipe is super flavorful with nutrient dense ingredients hidden inside. Your kids won't even know they're in there!

    It's cheesy, but there are so many other ingredients that pack in nutrition in this soup. I use bone broth in this recipe and most of my other soups. It's a great way to add some extra nutrition and protein into so many meals. Usually if a soup or pasta recipe calls for water, I use bone broth. Hidden inside are 12 Oz of cauliflower, 2 whole onions, and about 4 cloves of fresh garlic.

    This is optional, but I added some cooked pasta that I had left over from last night's dinner. I used about 2-3 cups in this recipe, but you could also use tortellini, rice, or nothing at all if you don't mind a thin soup. It could go without the pasta. I would serve with fresh bread. Sourdough is a favorite in my house.

    Ingredients

    • 1 lb Ground Beef
    • 2 Onions, white
    • 12 Oz Cauliflower
    • 8 Cups Chicken Bone Broth
    • 3 Cups marinara sauce
    • 8 oz Cream Cheese, (1 package)
    • 5 tablespoon Avocado Oil
    • 4 Garlic Cloves, minced
    • 2 Cups Mozarella Cheese
    • 1 Cup Parmesan Cheese
    • Salt + Pepper
    • ½ tablespoon Lawry's Garlic Salt, plus a little extra for the finished product
    • 1 tablespoon Italian seasoning
    • ¼ teaspoon Crushed red pepper flakes
    • Optional: leftover pasta, fresh pasta, tortellini, or rice.

    Instructions

    1. First gather everything you'll need. Get your soup pot hot. Add in your ground beef and fully cook it. If you are cooking pasta, get the water boiling for that.
    2. While it's cooking, mince your garlic and mince your onion. Chop your cauliflower up very small. Cut your cream cheese into small cubes.
    3. Drain the grease and then add Lawry's garlic salt and italian seasoning. Brown the beef a little bit and then set it aside.
    4. Add 5 tablespoon avocado oil to the pan and add in the onion, cauliflower, and garlic.
    5. Add in your bone broth and allow it to cook for about 10 minutes. If you want less chunky soup, use an immersion blender in this stage. Add in your pasta.
    6. Add in the marinara, cream cheese, mozzarella, and parmesan cheese.
    7. Let it all melt for a few minutes while whisking continuously. Add some more Lawry's garlic salt to taste.
    8. Serve hot with some fresh bread. Enjoy!

    Notes

    • Make it work with what you have. The pasta is optional. You could use leftover pasta, rice, tortellini, or nothing at all. You could use more cauliflower instead if you wanted to.
    • You can always use regular chicken stock or water with chicken bouillon in place of the bone broth.

    Storage

    • Keep in an airtight container for up to 3 days.
