This sausage tortellini soup makes a delicious and nutritious weeknight meal. With one pot, you can have this on the table in about 30 minutes. It's very customizable, too. It's cozy season in my kitchen and we have been eating all kinds of soups. This one has been a family favorite that my kids like, too!
The flavors of the garlic, Italian seasoning, and sun-dried tomatoes pair so well together and the marinara packs a little extra punch. Don't forget the parmesan! Cheese makes everything so much better. This is almost like a white lasagna in soup form. It's super tasty, you'll have to try it for yourself.
You can play around with the flavors. It would be just as good with Kale if you don't have spinach. You can use water and chicken bouillon if you don't have bone broth. Pasta can be used in place of tortellini. Make this recipe work with what you have.

Ingredients
- 1 lb Italian Sausage, ground
- 1 24 Oz Package Tortellini
- 2 Sweet Onions
- ½ Cup Sun dried Tomatoes
- 8 Oz Spinach
- 8 Cups Bone Broth
- ½ Cup Heavy Whipping Cream
- ½ Cup marinara
- 2 tablespoon garlic, fresh/ minced
- 1 teaspoon italian seasoning
- ¼ red pepper flakes
- 8 oz cream cheese
- 1 Cup parmesan cheese
Instructions
- Heat up a large pot and add in the sausage. Fully cook the sausage. A little browning is great.
- While the sausage cooks, prep the rest. Peel and dice the onions, roughly chop the spinach, chop the tomatoes and mince the garlic.
- Add onion, garlic, and sun-dried tomatoes to the sausage.
- Add in italian seasoning, red pepper flakes, marinara and bone broth.
- Once it's boiling add in tortellini. Cook for the time on the package instructions with the lid on.
- After tortellini is cooked, turn the heat off. Add spinach. It will wilt quickly.
- Add in cream cheese (diced), heavy whipping cream, and parmesan.
- Once fully melted, stir and enjoy! Top with your favorite things! Cheese, green onion, etc.
Notes
Play around with the flavors. If you don't have as big of a package of tortellini, add in some other noodles or more veggies. You can use kale in place of spinach. You can use water with chicken bouillon if you don't have bone broth. I like bone broth as an extra way to sneak in nutrients and extra protein.
Storage
This soup is even better leftover than it is fresh! It stores great in the refrigerator in an airtight container for about 3-4 days. You could also freeze it, like I do many different soups. Make sure you leave a good amount of space in your glass jars if that is what you freeze it in. Sometimes I freeze leftover soup in portion sized glass jars and freeze them for my husband to take to work when we don't have other leftovers. He has a mini crockpot and it's perfect for heating up soups and other leftovers.
