Step 1: Gather all of your ingredients. Pre heat your oven to 325℉. Spread your coconut flakes out on a sheet pan and bake for about 8 minutes or until they are slightly golden brown.
Step 2: While your coconut flakes are toasting, slightly warm your peanut butter (Only if it's too cold to mix) so that it is easier. Combine your peanut butter with the honey and vanilla extract.
Step 3: Mix the rest of the wet ingredients well and then add in your dry ingredients, including the coconut flakes.
Step 4: Let the mixture cool down and then form into little balls. Store in the refrigerator. They keep well in the refrigerator for several days and they freeze well for several months.
