These peanut butter pecan stuffed dates are viral for a good reason. They're filled with peanut butter and chopped pecans and covered in chocolate and they taste just like a candy bar. Yum!
8OzMedjool DatesPitted or you can remove them yourself. It’s very easy.
¼CupPeanut Buttermaybe a little more as ½ Cup was way too much.
½CupMilk Chocolate
¼CupDark Chocolate
⅛CupPecanschopped up small.
Instructions
Start by gathering everything you need. Cut your dates open (but don’t cut them in half completely) and take the pits out of they aren’t pitted.Lay them out on your cutting board and then melt your peanut butter a little bit so it’s easier to work with. Scoop it into your dates. Chop your pecans up really small and add place them in the peanut butter inside your dates. Pinch the dates closed so that the peanut butter and pecans don’t come out. Get out some parchment paper. Melt your chocolate together and then dip your dates in it. Place them on the parchment paper or else they will stick like crazy. If you don’t want them as sweet, you can just drizzle chocolate over them. Place in the refrigerator until the chocolate sets. Enjoy!
Notes
I like to use milk chocolate and dark chocolate. You can use whatever kinds you have. I have eaten these both dipped in chocolate and just drizzled with chocolate. Both are good.Store in an airtight container in the refrigerator for a few days. They’re just as good leftover.
