You'll love this recipe because it’s a comforting, hearty meal that’s full of rich flavor and incredibly easy to prepare. It's perfect for impressing guests, regular family dinners or contributing to a potluck with minimal effort.
Step 1. Get a chuck roast that is about 3-3.5 lbs. Mix together your dry spices and lime juice and rub it onto the entire chuck roast. Let it marinate for several hours or over night.
Step 2. Before cooking, drizzle avocado oil or olive oil over it and add it to an oven safe baking dish.
Step 3. Bake low and slow at around 250-300℉ covered. After a couple hours you will want to flip it and cover it back up. I like the internal temp to reach about 206℉. Cook to whatever temperature you'd like but we prefer it to be super tender. It should shred easily with a fork.
Step 4. Shred and serve on a tortilla, over mashed potatoes, or by itself. Add your favorite toppings and enjoy!

You can use a slow cooker or bake covered in the oven at a low temp.
