In your mixing bowl, combine the greek yogurt, protein powder, and strawberries.
Mix well and distribute among the molds. Try not to leave too much excess because it will be messier when you try to pop them out of the molds.
Freeze for at least 2 hours.
Melt your coconut oil and chocolate together. This should take about 30 seconds in the microwave. Stir until completely smooth.
Pop the strawberry yogurt mixture out of the molds and drizzle the chocolate over the tops of them. Place back in freezer to store.
Notes
For the strawberries, I used frozen and let them thaw. If you don’t have time to let them thaw, heat them up in the microwave until they become soft so that they blend well.
For the Protein Powder. I like to use Just Ingredients brand in Vanilla Bean. They’re my favorite brand but you can use what you have.
These really need to be stored in the freezer. If they are stored in the refrigerator, they tend to get too soft and fall apart. Get them out of the freezer to thaw for a few minutes before eating them.
