I should probably warn you that these toasted coconut clusters are highly addictive. They are so delicious and there is nothing like them. They remind me of one of the candies we would get at Gertrude hawk as a kid. These couldn’t be any more simple and everyone will love them.
15ozchocolate chocolate of choice. I used about 11oz. of milk chocolate and about 4 Oz. of dark chocolate.
Instructions
Gather everything you need and preheat your oven to 375°F.
Spread out your coconut flakes on a parchment paper lined baking sheet. You will need to toast these for about 5-7 minutes. Stir frequently because then brown very fast. You will notice the edges browning first, stir so it all gets a chance to toast a little bit.
Once they’re done toasting, melt your chocolate in a microwave safe bowl. or on the stovetop if you prefer. Do not add coconut oil to melting the chocolate this time.
Combine the toasted coconut flakes in with the chocolate.
Once mixed, use a cookie scoop and create little clusters. Spread them out on a baking sheet and pop in the refrigerator until they harden. Once they harden you can put them in a jar, and they won’t stick together.
Notes
You can play around with different chocolates.I keep these in the refrigerator and just take out what we plan to eat and let them sit at room temperature for a few minutes. They are just as good leftover.
