    Best Toasted Coconut Clusters

    I should probably warn you that these toasted coconut clusters are highly addictive. They are so delicious and they have such a good balance of sweet chocolate flavor and toasted coconut. With only two ingredients, they can't be any easier to make. The texture is perfect and they are bite size! What more could you want?

    These would be a great little treat to take to a family gathering. You don't need much time and they would be easy to transport. Everybody loves a bite sized snack!

    This is a very minimal recipe. I'm not even sure I should call it a recipe, but it definitely tastes good.

    Equipment

    • Baking sheet
    • Mixing Bowl
    • Spatula
    • Parchment Paper
    • Cookie Dough Scoop

    Ingredients

    • 2 Cups Coconut Flakes, unsweetened
    • About 15 Oz chocolate of choice. I used about 11oz. of milk chocolate and about 4 Oz. of dark chocolate.

    Instructions

    1. Gather everything you need and preheat your oven to 375°F.
    2. Spread out your coconut flakes on a parchment paper lined baking sheet. You will need to toast these for about 5-7 minutes. Stir frequently because then brown very fast. You will notice the edges browning first, stir so it all gets a chance to toast a little bit.
    3. Once they're done toasting, melt your chocolate in a microwave safe bowl. or on the stovetop if you prefer. Do not add coconut oil to melting the chocolate this time.
    4. Combine the toasted coconut flakes in with the chocolate.
    5. Once mixed, use a cookie scoop and create little clusters. Spread them out on a baking sheet and pop in the refrigerator until they harden. Once they harden you can put them in a jar, and they won't stick together.

    Notes

    • You can play around with different chocolates.

    Storage

    • I keep these in the refrigerator and just take out what we plan to eat and let them sit at room temperature for a few minutes. They are just as good leftover.
