    Lemon Chicken and Rice Bowls

    These lemon chicken and rice bowls are full of veggies and protein. They are tangy and delicious. They make a balanced meal that you can have on the table in 30 minutes. It really is the perfect dish for busy nights.

    I love to make rice bowls in my house. These are delicious and so customizable. The lemon chicken and rice are the stars of the show along with the lime crema. Add in some avocado for a healthy fat. You could substitute whatever veggies you'd like. You can also use whichever type of rice. I have made it with cauliflower rice and jasmine rice which were both delicious. If you want one less dish to wash, grab some instant microwavable rice.

    Equipment:

    • Knife
    • Cutting Board
    • 2 Pans- one large and one medium
    • One pot for rice
    • lemon squeezer

    Ingredients:

    • 1 lb. Thin sliced chicken breast- You can use regular chicken breast and slice it thin yourself.
    • 2 Cups Brown Rice, you could use any rice including cauliflower.
    • 2 Cups Spinach
    • 2 Cups Broccoli
    • 1 large Onion
    • 1 Lemon
    • 1 Lime
    • ¼ Cup sundried tomatoes
    • ¼ Cup sour cream
    • Olive Oil for drizzling
    • Salt, Pepper, Lawry's garlic salt

    Instructions:

    1. Gather everything you need. Wash your lemon and lime and cut them in half. Wash broccoli and cut it up small, cut your sun-dried tomatoes up smaller, dice your onion, and roughly chop your spinach.
    2. Get your largest pan hot with and add some olive oil.
    3. If you are making non-instant rice, get your water boiling for that and continue following instructions. You can also use instant rice, make that closer to the end.
    4. Once your pan is hot, lay your chicken in the pan and season with Lawry's garlic salt (or regular salt and garlic powder) and squeeze ½ of your lemon over it.
    5. Flip and repeat with the seasonings and lemon once first side is browning.
    6. Get your second Pan hot and add in your broccoli, onion, and sundried tomatoes. Season with a little salt and pepper.
    7. Once veggie are fork tender, add in your spinach and put cover. It doesn't take long to wilt.
    8. In a small dish- add about ¼ Cup Sour cream and squeeze the juice of one tiny lime over it. You could add the zest, too, but it's optional.
    9. After everything is fully cooked, cut up your chicken and assemble your bowls. Add rice, chicken, and a mountain of veggies. Drizzle the lime mixture over the bowl. Enjoy!

    Tip: If you're undecided about which rice to use, try mixing white rice or jasmine rice with cauliflower rice for some extra veggies. I personally can't tell much of a difference and my kids can't either.
