Sourdough discard blueberry muffins are always a hit in our household. My kids can't get enough, and they only last a day or two around here. (There are only 4 of us.) I don't mind because they are a great way to pack some nutrients in a picky eater.
Why these specific muffins?
The short answer is because they are healthier, cheaper, and easier than you might think. Most prepackaged snacks have so much extra stuff in them that I wanted to start making my family's snacks at home. No preservatives, dyes, or anything artificial.
These make a great grab and go breakfast when you are in a pinch or a quick healthy snack. It is one of the first recipes that comes to mind when I have extra starter. I have also made these with active bubbly starter when I have had extra, and they turn out the same. They are fast and super simple to make, even for beginners.
There are also many variations that you could try. This recipe is for blueberry muffins, but I have also made them without using blueberries and added some cinnamon. You could swap out the blueberries for any of your favorite fruits. There are so many possibilities.
Ingredients
- ¾ Cup sourdough starter- This is so beneficial for your gut.
- ½ Cup pure maple syrup- Much more natural than regular sugar.
- ⅓ Cup unsweetened almond milk
- ¼ Cup avocado oil- A great healthy fat
- 2 Tbsp honey
- 1 tsp vanilla extract
- 1 egg
- 1 cup all-purpose flour
- 1 cup almond flour
- 1 tsp baking soda
- ½ tsp salt
- 1 ½ Cup blueberries- loaded with antioxidants.
Instructions
- First you need to preheat your oven to 425°F. Then get out a regular size muffin pan and 12 liners. I prefer these.
- I like to gather all of my ingredients to have ready to go as I read down my recipe lists.
- You'll need two bowls- one for your wet ingredients and one for your dry ingredients.
- Combine all of your wet ingredients in one bowl: This includes the sourdough starter, maple syrup, almond milk, avocado oil, honey, vanilla, and egg then mix well.
- In another bowl add all of your dry ingredients: This includes the all purpose flour, almond flour, baking soda, and salt then mix well.
- Once each individual bowl is mixed you slowly add all of your mixed dry ingredients into your wet ingredients. Once everything is combined it's time to add in your frozen blueberries. Mix them in.
- Evenly distribute among your 12 liners and once your oven is fully preheated and bake them for about 20-25 minutes or until the tops are slightly browned.
- Enjoy!
