What should I do with my sourdough discard? Don't throw it out! Make some of the best quick and easy sourdough discard waffles. They are so delicious and super easy, even if you have never made waffles. Your day will be off to a good start with the gut health benefits of sourdough.
It has taken me awhile to perfect this recipe for my family. I have been making these waffles for about a year now and you can, too. They come together quickly and I usually serve them with vanilla greek yogurt and my simple blueberry sauce. You can find that recipe here.
You could also serve them with just pure maple syrup and they are delicious that way, too. My kids gobble them down every time and they ask me to make them often. Once you have made them a few times, you will find the toppings that your family loves.
If you have kids that like helping in the kitchen- this quick and easy sourdough discard waffle recipe is a good one for that. My five-year-old likes to help with these. He loves cracking the eggs and whisking them in. I find that it's much easier for them to help with something like waffle batter than it is cooking dinner on the stove.
You'll want to grab your kitchen scale and your waffle maker. I will link mine below. It makes four waffles at once. It goes by pretty quick this way and you can easily adjust the browning settings. I have it set to make thick and crispy waffles.
I like to add protein powder to ours. It doesn't matter what brand you use. We have used Flav City and Just Ingredients because we prefer a clean protein powder. In this specific photo and recipe we used Just Ingredients. I like them both. We prefer vanilla flavor. I tried substituting with chocolate and we did not care for those.

Ingredients
- 3 Oz Unfed sourdough discard
- 1 Can coconut milk (13.66 fl oz or close to that)
- ¾ Cup unsweetened vanilla almond milk
- 4 Eggs
- 2.5Oz or 75G vanilla protein powder
- 2 Cups all purpose flour
- 4 TBSP coconut sugar
- 1 TBSP honey
- 3 tsp baking powder
- 2tsp Salt
Instructions
- First gather up all of your ingredients and your scale and plug your waffle maker in
- Next grab a bowl and add in all of your measured wet ingredients- including your eggs
- Then mix your protein powder into the wet ingredients. Even though it's technically a dry ingredient I find that it works best this way.
- I like as few dishes as possible so I add the dry ingredients right on top of the wet ingredients and stir them together a little before folding them into the wet ingredients
- Combine everything until it is a smooth consistency.
- If your batter seems too thick, add a little more almond milk. If it seems too thin, add a little more flour.
- Once you have reached your desired consistency it's time to add the batter to your waffle maker
- Finally, it's time to eat!
- This recipe will make about 14 waffles
Notes
- If you don't have coconut milk, you can replace by adding the same amount of ounces in unfed sourdough discard.
