This sausage tortellini soup makes a delicious and nutritious weeknight meal. You can have this on the table in about 30 minutes, and it’s such a comfort food. The flavors of the garlic and sun-dried tomatoes pair so well together. The marinara packs a little extra punch. My family loves this soup!
Heat up a large pot and add in the sausage. Fully cook the sausage. A little browning is great.
Peel and dice the onions, roughly chop the spinach, chop the tomatoes and mince the garlic.
Add onion, garlic, and sun-dried tomatoes to the sausage.
Add in italian seasoning, red pepper flakes, marinara and bone broth.
Once it's boiling add in tortellini. Cook for the time on the package instructions with the lid on.
After tortellini is cooked, turn the heat off. Add spinach. It will wilt quickly.
Add in cream cheese (diced), heavy whipping cream, and parmesan.
Once fully melted, stir and enjoy! Top with your favorite things! Cheese, green onion, etc.
Notes
Play around with the flavors. If you don't have as big of a package of tortellini, add in some other noodles or more veggies. You can use kale in place of spinach. You can use water with chicken bouillon if you don't have bone broth. I like bone broth as an extra way to sneak in nutrients and protein.This is even better leftover! It will stay delicious in your refrigerator in an airtight container for about 3-4 days.
