    Strawberries and Cream Protein Snacks

    These strawberries and Cream Protein Snacks are satisfying and sweet. They are higher in protein than regular yogurt and super flavorful. It's fun playing around with using different molds and decorating them. These would make a good after school snack for kids. They're made with healthy ingredients but still feel like a treat.

    I love basing snacks off of greek yogurt and different protein powders. I feel like those are two ingredients to get your protein in that make a healthy snack base. There are so many different flavor combinations that you could make. I love a base flavor with either a peanut butter or chocolate drizzle.

    These strawberries and cream yogurt snacks are best when kept in the freezer. You can get them out to thaw for a few minutes before eating but if you keep them in the refrigerator, they get too soft and lose their shape.

    Equipment

    • Mixing Bowl
    • Small microwave safe bowl
    • Silicone molds
    • Spatula

    Ingredients

    • 1 Cup Plain Greek Yogurt
    • 2 Cups Frozen Strawberries, see note
    • ½ Cup Protein Powder, see note
    • ½ Cup Dark Chocolate
    • 1 teaspoon Coconut Oil

    Instructions

    • Soften your strawberries (if frozen) and blend until they reach a smooth consistency.
    • In your mixing bowl, combine the greek yogurt, protein powder, and strawberries.
    • Mix well and distribute among the molds. Try not to leave too much excess because it will be messier when you try to pop them out of the molds.
    • Freeze for at least 2 hours.
    • Melt your coconut oil and chocolate together. This should take about 30 seconds in the microwave. Stir until completely smooth.
    • Pop the strawberry yogurt mixture out of the molds and drizzle the chocolate over the tops of them. Place back in freezer to store.

    This is how the strawberry yogurt mixture should look when it is ready to be spread into molds.

    After freezing, your shapes should pop out of the silicone molds with a nice shape if they are frozen enough.

    STORAGE

    • These really need to be stored in the freezer. If they are stored in the refrigerator, they tend to get too soft and fall apart. Get them out of the freezer to thaw for a few minutes before eating them.

    Notes

    • For the strawberries, I used frozen and let them thaw. If you don't have time to let them thaw, heat them up in the microwave until they become soft so that they blend well.
    • For the Protein Powder. I like to use Just Ingredients brand in Vanilla Bean. They're my favorite brand but you can use what you have.
    • Make sure that the yogurt mixture is completely solid before trying to pop them out.
