    Indulge in a warm, single-serving protein brownie in a mug that's as easy to make as it is satisfying. This quick treat has a little added protein. It is the perfect way to unwind after a long day—rich, chocolatey, absolutely delicious and guaranteed curb your sweet cravings without the guilt.

    Ingredients

    These brownies are simple with real food ingredients.

    • Almond milk
    • avocado oil or olive oil
    • pure vanilla extract
    • unflavored protein powder
    • all purpose flour
    • cocoa powder
    • brown sugar or honey
    • salt
    • baking powder
    • dark chocolate chips
    • vanilla greek yogurt (for topping)

    Instructions

    Step 1: Gather all of your ingredients, measuring spoons, and a mug that is microwave safe.

    Step 2: Start by adding in all of the wet ingredients and mix well. Then add in your dry ingredients and gently mix together before stirring in with the wet. Mix for what feels like forever until there are no dry pockets or lumps.

    Step 3: Top with dark chocolate chips and pop in the microwave for about 1-2 minutes. Every microwave is different, so watch it and make sure it is rising. The top should be solid but not dry.

I prefer mine to be less cakey and dry so I don't cook them as long as my husband, who likes them very cakey.

    Substitutions

    Using what you have:

    • Brown Sugar - instead of brown sugar, you can use honey.
    • Avocado Oil - Instead of avocado oil, you can use olive oil.
    • Dark Chocolate - You can use any chocolate chips that you have on hand.

    Equipment

    Equipment can have a big impact on how a recipe turns out. You'll just need a microwave safe mug or small bowl and a microwave.

    Storage

    Best served fresh. I wouldn't know if they store well because we eat them while they are still warm!

    Top Tip

    Feel free to experiment a little bit if you don't have the exact ingredients, such as the correct oil, chocolate chips, or sugars. Don't forget baking powder though!

    For a higher protein/ lower carb option:
    I sub 2 tablespoon flour,2 tablespoon unflavored protein powder,  1 tablespoon sugar with:
    1 tablespoon flour and 3 tablespoon protein powder ( I like 2 unflavored and 1 vanilla) and no Sugar

      Oh what a great idea to make a brownie in a mug! I love this. If I bake a whole big brownie in a pan, I also eat the whole thing. Which is not ideal. These brownie mugs sound perfect for a single serve to soothe an occasional craving. Great recipe!
