This Oatmeal Pumpkin Breakfast Bake is the perfect cozy fall breakfast! Made with wholesome ingredients like oats, pumpkin puree, cottage cheese, and protein powder, it’s nourishing, high in protein, and naturally sweet with warm spices. This oatmeal pumpkin bake has the taste of pumpkin puree and warm spices, making every bite feel like fall. It's a great option to make ahead and reheat through out the week as part of your meal prep.

- Cottage Cheese
- Milk, almond or dairy
- pumpkin puree
- Pure maple syrup
- Vanilla extract or vanilla bean paste
- Vanilla Protein Powder
- Old fashioned Oats
- Salt
- Cinnamon
- Pumpkin Spice
- Baking Powder
- Butter
- Cream Cheese

Instructions
Preheat your oven to 350℉. Grab a mixing bowl and add your wet ingredients first. Once mixed, add in your protein powder and whisk. On top of the wet ingredients add your spices, oatmeal, and baking powder. Mix the dry ingredients together a little bit before stirring them into your wet ingredients. Once everything is mixed well, get a baking dish, spray it and when your oven is preheated bake for about 40 minutes or until the top is a little golden and somewhat firm. While the mixture is baking, make your drizzle. In a microwave safe bowl add your cream cheese and butter and microwave until soft. Start with 10 second increments. Once warm, add a splash of vanilla extract or vanilla bean paste and maple syrup. Whisk really well until smooth and then it's ready to drizzle over the oatmeal.

Storage
Store in a container in the refrigerator for up to 4-5 days.
Top Tip
Adjust your spices to your liking. If you want it more pumpkin spice flavor you could add more of that and less cinnamon. Also- You don't need to blend your cottage cheese.
