    Viral Peanut Butter Pecan Stuffed Dates

    These viral peanut butter pecan stuffed dates are viral for a good reason. They're filled with peanut butter and chopped pecans and covered in chocolate and they taste just like a candy bar. I didn't believe anything like this could actually resemble a candy bar but it's true.

    These are just so satisfying and delicious. They are sweet and they're still a healthier option than actual candy. Look at the inside of that. Doesn't it make you hungry?! This recipe was inspired by my date bars.

    I don't usually jump on the viral bandwagon, but these viral peanut butter pecan stuffed dates just kept calling my name. These are so similar to my quick and easy date bars, which are here. They are a bit less messy to make and eat but both are absolutely delicious.

    I love making homemade snacks. These are a little bit out of character for me because I usually aim for higher protein + healthier snacks but sometimes we just need a treat. My sweet tooth got the best of me.

    Equipment

    • Cutting Board
    • Knife
    • Measuring Cups

    Ingredients

    • 8 Oz bag of Medjool Dates, Pitted or you can remove them yourself. It's very easy.
    • ¼ Cup Peanut Butter, maybe a little more as ½ Cup was way too much.
    • ½ Cup Milk Chocolate
    • ¼ Cup Dark Chocolate
    • ⅛ Cup Pecans, chopped up small.

    Instructions

    1. Start by gathering everything you need.
    2. Cut your dates open (but don't cut them in half completely) and take the pits out of they aren't pitted.
    3. Lay them out on your cutting board and then melt your peanut butter a little bit so it's easier to work with. Scoop it into your dates.
    4. Chop your pecans up really small and add place them in the peanut butter inside your dates.
    5. Pinch the dates closed so that the peanut butter and pecans don't come out.
    6. Get out some parchment paper. Melt your chocolate together and then dip your dates in it. Place them on the parchment paper or else they will stick like crazy.
    7. If you don't want them as sweet, you can just drizzle chocolate over them. Place in the refrigerator until the chocolate sets. Enjoy!
    Step 1: Halve dates + remove pits
    Step 2: Add Peanut Butter
    Step 3: Add crushed pecans
    Step 4: Close dates and pinch ends together
    Step 5: Dip in chocolate

    Notes

    • I like to use milk chocolate and dark chocolate. You can use whatever kinds you have. I have eaten these both dipped in chocolate and just drizzled with chocolate. Both are good.

    Storage

    • Store in an airtight container in the refrigerator for a few days. They're just as good leftover.

      I am often hesitant to eat dates (prune juice gave them a bad name LOL), but stuffed dates are amazing! Can't wait to try this! My recent favourite has been bacon wrapped dates stuffed wth goat cheese.
