    Spicy 30 Minute Sausage Kale Soup

    This 30 minute spicy sausage kale soup is a great dinner for busy weeknights. It's a one pot meal and it can be on the table in about 30 minutes, hence the name. The flavor is bold, spicy, and delicious. It's loaded with kale, bone broth, and tortellini. It's a super cozy soup for the colder months.

    This recipe is for everyone that grows a boatload of kale in their garden and has no idea how to use it all up. This recipe calls for a lot of kale and you could even add more then I suggest. Another great way to use up extra kale are smoothies. I have smoothie recipes on this website if you go to the snack or breakfast category. There are so many flavors and combinations for soups. Since this is spicy sausage kale soup, this recipe really focuses on kale, sausage, and sun-dried tomatoes, and red pepper flakes. The flavors pair so well with some fresh garlic and Italian seasoning. This recipe is even better leftover.

    The taste of a homemade soup is hard to beat. Store bought soups just don't measure up to homemade. A great addition to homemade soups are fresh garlic, vegetables, and bone broth. Bone broth is different than chicken stock. It has more nutrition in it and it's much higher in protein. It's more expensive but even if you only swap out some of the chicken stock for bone broth, it's an improvement. No worries if you only have chicken stock, or water with chicken bouillon. It will still taste great.

    Ingredients

    • 1.5 LB sausage. I used breakfast because that is what I had but I think Italian sausage would be even better.
    • 5-6 Cups of Kale. You want a lot of Kale!
    • 1 Jar (8.5 oz) sun-dried tomatoes
    • 5 Cups Bone Broth, Chicken flavor: This adds extra protein.
    • 3 tablespoon fresh garlic, minced
    • 1 onion, large sweet
    • 1 teaspoon italian seasoning
    • ½ teaspoon Crushed Red Peper Flakes
    • 1 teaspoon Lawry's Garlic Salt
    • 16 oz Tortellini
    • 4 tablespoon butter
    • ¼ Cup all-purpose flour
    • 1 cup heavy whipping cream
    • ¾ Cup shredded parmesan

    Instructions

    1. Gather everything you need and get your soup pot hot on medium high. Cook your sausage until browned. While the sausage is cooking, finely chop your onion, (wash- if needed) and chop your kale, and mince your garlic.
    2. Once sausage is cooked, set aside. In the same pan add in the butter, onion, garlic, sundried tomato (with the oil if you choose), spices, and flour.
    3. Whisk and let cook for about 3 minutes and then add in the bone broth.
    4. Once the bone broth is in add your tortellini in and cook according to instructions with the lid on. After your tortellini is cooked, add in your heavy whipping cream, parmesan, and kale. Place the lid back on. Turn the heat off and give it a stir. Let it sit for a few minutes stirring occasionally.

    Notes

    • You could use regular pasta instead of tortellini. When reheating, you might want to add a little bit of chicken bone broth. You can use chicken stock in place of chicken bone broth.

    Storage

    • This is great leftover. Store in an airtight container in the refrigerator for up to about 3 days.
