    The Best Simple Chicken Salad

    I have a simple chicken salad recipe for you! I have experimented with so many variations over the last few years. This is my favorite, by far. It makes for a great throw together lunch that you can have ready to eat in five minutes. There are minimal ingredients and higher protein than traditional chicken salad.

    My family prefers to eat this on sourdough bread. We like open face sandwiches toasted or non-toasted regular sandwiches. It's also good on crackers if you aren't a bread person. We are 100% a bread family here. I will be adding some bread recipes on here in the coming weeks.

    You could make a large batch to take to a cookout. This specific recipe is meant for two adults to each have one large sandwich similar to a subway footlong sub. You could also divide among four tiny sandwiches or wraps.

    Ingredients

    • 1 Cup diced rotisserie chicken- or any cooked and cubed chicken
    • ½ small onion or about ⅓ Cup finely diced
    • 1 stalk celery or about ⅓ cup- finely diced
    • A handful or about 7 green seedless grapes- finely diced
    • ¼ Cup plain greek yogurt
    • 1 TBSP mayo
    • ⅛ teaspoon black pepper
    • ¼ tsp garlic salt- I prefer Lawrys
    • optional- green onion for the top

    Instructions

    1. Gather all of your ingredients and one medium size bowl
    2. First WASH your food, then dice everything up very finely
    3. Combine it all in one big bowl and give it a taste test
    4. Add more black pepper and garlic salt to your preference ( I added a little more of each at the end)
    5. I love to add sliced green onion to mine but I did not have any this particular day
    6. Best served on toasted sourdough as an open face sandwich
