    The best simple blueberry syrup

    This might be the easiest recipe ever-that makes such a big difference. I'm not even sure it should be called a recipe, but I thought it was worth sharing. I usually make this for my sourdough discard waffles recipe which you can find here. It's super delicious over pancakes, too.

    The best simple blueberry syrup

    This recipe was made to be something sweet enough to be considered a treat or something special to go with your meal but also to have some health benefits. Its jam packed with antioxidants and also honey is great for your gut microbiome, too!

    It isn't very sweet. I would say it is pretty tarte but paired with a yogurt it's perfect. We prefer to pair it with vanilla greek yogurt. It would probably also be good with plain yogurt with a little vanilla extract and extra honey.

    The ingredients and time spent are both very minimal. You should start the process as soon as you a starting your waffles or pancakes. Then it will be done but still hot.

    Simmering on the stove.

    I have to warn you- this can be extremely messy. If you have small kids like me, don't let them escape from the table without being wiped off first!

    Ingredients

    • 2 Cups frozen wild blueberries
    • 3 TBSP honey

    Instructions

    1. Grab your frozen (or fresh) blueberries and put them in a pan over medium heat
    2. Add in your honey to the top without stirring yet
    3. Once they start getting juicy I stir in the honey and smash down the blueberries
    4. Let reach a boil then turn the heat down to low
    5. Let simmer for about 5 minutes or until your waffles/pancakes are done
