    Easy Almond Flour Oat Balls

    These easy almond flour oat balls are a delicious and quick snack to make. They take just a few ingredients that you probably already have. They are sweet and satisfying enough to be a treat and they are pretty healthy. They're kid approved, too!

    Easy almond flour oat balls

    You could make so many variations of these. They just need some type of flour or oat base, a sweetener, and something sticky to hold them together. I find that snacks like this are something that I can pack some nutrition in that my small kids will still really enjoy. When I make treats like this, I usually add in flax seed or chia seeds. Play around with them if there is an ingredient that you don't have on hand. They are so adaptable.

    Ingredients

    • Almond Flour: Healthy fats, fiber, and protein.
    • Oats: Fiber. You can use old fashion oats or instant if that is what you have. I prefer old fashion.
    • Chia Seeds: Antioxidants, Fiber, and protein. You could also add in flax seeds.
    • Coconut Oil: Healthy fat
    • Peanut Butter: Protein and fat. You could replace this with any nut butter. Almond butter would be great.
    • Pure Maple Syrup: A natural sweetener. You could use honey if you prefer that. I would use a little bit less if I was swapping them. Either of them are a better option that regular white sugar.
    • Salt, just a pinch.
    • Chocolate: Makes life more enjoyable.

    What Equipment will I need?

    • A bowl
    • a spatula
    • measuring cups
    • measuring spoons

    Instructions

    They are the easiest snack to mix up.

    1. First you're going to take your coconut oil and melt it in the microwave or however you prefer.
    2. Now add in your peanut butter and get it blended with the coconut oil.
    3. Next add in your maple syrup and vanilla. Give it another stir.
    4. Add in your oats and almond flour, chia seeds, and a pinch of salt.
    5. Finally, fold in your chocolate chips.
    6. Cover and put in the refrigerator to set for twenty minutes.
    7. Take them out and form tiny little bite size balls.
    8. Store in the refrigerator or freezer.

    NOTE: The mixture will be very sticky. That is why they need to chill in the refrigerator for a bit before shaping them. You didn't do anything wrong.

    Storage

    They will last in the refrigerator for several days. These freeze well, too. Make sure you lay them flat, so they don't get smooshed together. I made a giant batch of this type of snack that had more oatmeal and added flax seeds for postpartum. They make a great munching snack that can be beneficial for breastfeeding and milk supply.
