    Cheesy Tortellini with Beef

    There’s just something about a big bowl of cheesy tortellini that feels like the ultimate comfort food. This recipe takes it up a notch with a hearty beef meat sauce that’s secretly packed with veggies like cauliflower and onion. My kids have no idea because it's all blended right into the sauce. It’s cozy, flavorful, and easy!

    This is an easy week night dinner that you can make in one pot with about 30 minutes! Your family will never know there are blended up veggies in there.

    Ingredients

    • Ground Beef
    • Tortellini
    • onion
    • cauliflower, you can use frozen
    • marinara sauce, I like Ragu kettle
    • garlic cloves
    • cream cheese
    • mozzarella cheese
    • parmesan cheese
    • seasonings
    • Avocado oil or olive oil

    Instructions

    There are a couple ways that you can make this.

    If you are someone that has prepared cooked meat frozen and ready to warm up and eat: I usually keep cooked meat ready to go in my freezer. If I have that, I start with my sauce. I add a splash of oil in my pan on medium high heat and as it is heating up- chop your onion and mince your garlic. Once chopped, add in my chopped onion, minced garlic, and roughly chopped cauliflower. I use the frozen bags of cauliflower. While your veggies are simmering, add in all of your seasonings and then once tour veggies are soft add in your marinara. Blend with your immersion blender. If the sauce is too thick, you can add a splash of bone broth or water or use your regular blender. Once you have your sauce mixture, throw in your hunk of frozen burger. After it is heated enough to chop up in the sauce, add in your cream cheese and shredded cheeses. Once melted, add in your tortellini, put the heat on low and put the lid on. Once everything is heated through and your tortellini is tender, it's time to plate your food!

    If you have raw meat: If I am working with raw meat, I like to cook my meat first so I can just stick with one pan. While you chop your veggies and mince your garlic, put your burger in a pan on medium high heat. Chop it up as it cooked. Once cooked to the temp of at least 165℉, set aside on a dish. Add another small splash of oil and add your onion and cook for a couple minutes then add your cauliflower. Once the veggies have softened, add in your seasoning. Add your marinara and then use your immersion blender to blend a nice thick sauce. Add your cream cheese in, shredded cheeses, and place meat back in. Once the cheeses melt, add your tortellini, turn your heat to low and put the lid on. Once the tortellini is tender, it's time to plate your food!

    Note: If your veggies and marinara are too thick for your immersion blender, you can add a splash of bone broth or water. You can also use your regular blender.

    Variations

    As always, make the recipe your own with your preferences and what you have on hand. I have made this with and without the cauliflower, and I have switched up my sauce and my cheeses. It always turns out good!

    Storage

    Store in a container in the refrigerator for up to 4 days.

    Ingredients
      

    • 1 lb Ground Beef
    • 12-18 oz Tortellini Just depends on the brand
    • 1 large onion
    • 12-16 cauliflower you can use frozen
    • 24 Oz Jar marinara sauce I like Ragu kettle
    • 3 garlic cloves
    • 1 brick cream cheese
    • 1.5-2 Cups mozzarella cheese
    • ½ Cup parmesan cheese
    • seasonings
    • 2 teaspoon italian seasoning
    • ¼ teaspoon salt
    • ½ teaspoon black pepper
    • 1 teaspoon garlic ( and also the minced garlic)
    • 1 teaspoon onion
    • Taste + season to your liking at the end
    • Avocado oil or olive oil

    Instructions
     

    If you have cooked meat to use

    If you're working with raw meat
