If you're looking for an easy high protein meal to please a crowds, this slow cooked super tender chuck roast is the one for you. This chuck roast is so simple, just the chuck roast itself, some oil, some lime juice, and seasonings. It's very healthy, juicy, and tender.

This was inspired by my sheet pan steak fajitas on this site, and pairs well with this flour tortillas recipe. You could serve this in a wrap, on your favorite rolls, over potatoes, or by itself.

Ingredients
The ingredients are very minimal.
- Chuck Roast
- Lime Juice
- Garlic Powder
- Onion Powder
- Seasoned Salt
- Avocado Oil or Olive Oil

Instructions
Step 1. Get a chuck roast that is about 3-3.5 lbs. Mix together your dry spices and lime juice and rub it onto the entire chuck roast. Let it marinate for several hours or over night.
Step 2. Before cooking, drizzle avocado oil or olive oil over it and add it to an oven safe baking dish.
Step 3. Bake low and slow at around 250-300℉ covered. After a couple hours you will want to flip it and cover it back up. I like the internal temp to reach about 206℉. Cook to whatever temperature you'd like but we prefer it to be super tender. It should shred easily with a fork.
Step 4. Shred and serve on a tortilla, over mashed potatoes, or by itself. Add your favorite toppings and enjoy!
Hint: Instead of trying to keep foil on the baking dish, I like to cover with a sheet pan.

Equipment
All you need are measuring spoons, a meat thermometer, a baking dish, and something to cover such as foil or a sheet pan.
Storage
You can store in the refrigerator for 3-4 days or you can freeze for a later date. I like to freeze in individual serving bags and grab them for lunches when we don't have any leftovers.
Top Tip
Make sure you cook low and slow covered so that it is tender and juicy.
FAQ
If you don't want to use chuck roast, you can substitute it with a rump roast or shoulder roast.
