These easy roasted carrots with lemon make a great side with dinner. They pair well with anything from burgers to pasta. They're super simple with only a couple ingredients and they are delicious. They are pretty inexpensive to make, too.

It can be really hard to find foods that are healthy that your kids will actually eat sometimes. I really try to get my kids to eat real healthy foods with us instead of serving them "kid food." I think if you are always offering them the same things that you're eating, it eventually sticks. Of course they have their own set of taste buds, but most of the time they will accept and eat some of the same things that you've been serving them...even if you have to doctor it up a little bit.
Like I said, these are so easy and require just a few things.

Equipment
- Large baking sheet
- Parchment Paper
- Peeler
- Knife
- Cutting Board
- Zester. If you don't have a zester, use a cheese grater.
Ingredients
- About 10 whole carrots- Peeled and cut into 2 inch skinny sticks (or coins.) Think of them as being about the size of french fries just a little bigger.
- about 1 teaspoon lemon freshly squeezed. Doesn't have to be exact.
- olive oil to drizzle over
- salt + pepper to taste


Instructions
- Gather everything you need and pre heat your oven to 425°F.
- Wash and peel your carrots.
- Cut the ends off. Chop carrots into 2 inch skinny sticks. Think of the size of French fries but a little thicker.
- Spread out on a baking pan that you have lined with parchment paper.
- Drizzle olive oil and salt and pepper. Mix to coat and spread them back out.
- Bake for about 25 minutes. While they are baking, zest half a lemon and cut it in half.
- Once the carrots are baked, add in a little squeeze of lemon juice and some zest. Start small, you can always add more but you can't take away.
Notes
- Remember that you can't take flavor out of anything, but you can always add more in.
