I love a good sheet pan meal. The less dishes and hands on time, the better. They make such a great meal for anyone with small kids. We all know how chaotic dinner time can get. The less hands on time, the better!

steak fajitas on a tray with toppings

Sheet pan meals might be your new go to. The possibilities are endless. You just need a protein, vegetables, and seasonings. Serve with tortillas, or over rice or pasta. You can even use leftover rice or pastas.

steak fajitas on a tray with limes and sweet peppers

I love fajitas and tacos. These steak fajitas are no exception. Even my kids loved them. Serve these on my homemade tortillas with oil.

    Equipment

    • Sheet Pan
    • Lemon Squeezer
    • Parchment Paper
    • Cutting Board
    • Knife
    • Ziploc Bag

    Ingredients

    • 1 lb Skirt Steak, cut into tiny strips
    • 2 Sweet Peppers, orange, yellow, or red
    • 1 large white onion
    • 2 teaspoon Lawry's garlic salt
    • Avocado Oil Spray, See Note
    • 2 tablespoon butter, salted
    • Marinade
      • The juice of 3 small limes
      • 2 tablespoon Avocado Oil
      • 2 teaspoon minced garlic, fresh
      • ½ teaspoon Chilli Powder
      • 1 teaspoon ground cumin
      • salt + pepper to taste
      • Pinch of Cayenne pepper
    • Garnish (Optional)
      • Extra limes for squeezing
      • Sour Cream
      • Cheese
      • Salsa
      • Avocado
      • Banana Peppers

    Instructions

    1. Ideally, the night before you will cut up your skirt steak and let it marinate in an airtight container. If you can't do that, it's okay. Try to let it marinate for an hour or as long as you have time for. Again, it's okay if you are hurrying, it will just be more flavorful if it marinates.
    2. First, cut up your steak. Get your steak in the marinade. Then cut your peppers and onion up. Slice up your butter and set it aside. If you are making homemade tortillas, get an easy recipe here and get started on those. If you are using store bought, skip this step.
    3. Preheat your oven to 450°F.
    4. Line your sheet pan with parchment paper. Make a separate section that acts as a bowl for the steak and marinade. Sprinkle some Lawry's garlic seasoning over the onion and peppers. Spray them with avocado or olive oil. Add your sliced up butter over the top of the steak and vegetables.
    5. Bake until the steaks reach your desired cooking level.

    Notes

    • Ideally, the night before you will cut up your skirt steak and let it marinate. If you can't do that, it's okay. It just won't be quite as flavorful.
    • If you don't have an avocado oil spray, it's okay to drizzle on avocado oil or olive oil and lightly coat your peppers and onion.
    • Cook these to your liking

I am saving this recipe! I love fajitas and other Hispanic foods, and we make them often, but I never thought about making it easier and less time consuming by doing it in the oven! Genius! I also need to pick up the discipline of marinating meat beforehand! Thanks for sharing!

Beautiful recipe! That marinade sounds just delicious. Making these on a sheet pan certainly simplifies the cooking process, and it is also helpful that a bunch of the prep could be done in advance when convenient and then baked just before.

I wonder if it would work to prep a bunch of the steak and freeze in batches for later use? I guess then we would need to do the peppers and onions the day of.

I freeze marinated steak so I think that would work just fine. I also freeze sliced up raw peppers and onions. Maybe it could be a totally pre-prepped meal!
