This recipe makes the perfect pick-me-up for an afternoon slump, a crowd-pleaser for potlucks, and a thoughtful make-ahead snack for postpartum recovery—just freeze and enjoy later. They're also ideal for picnics, school lunches, or work breaks. With so many ways to enjoy them, the possibilities are endless!
This was inspired by my almond flour oat balls on this site. They are both simple snacks that are great to make ahead and enjoy for days to come.

Ingredients
This recipe uses simple ingredients.

- Oats, Old fashioned oats or quick cooking oats
- Almond flour
- Coconut flakes, best toasted but it's totally optional!
- Flax Seed
- Chia Seeds
- Chocolate Chips
- Vanilla Extract
- Honey
- Peanut Butter

Instructions

- Step 1: Gather all of your ingredients. Pre heat your oven to 325℉. Spread your coconut flakes out on a sheet pan and bake for about 8 minutes or until they are slightly golden brown.
- Step 2: While your coconut flakes are toasting, slightly warm your peanut butter (only if it's too cold) so that it is easier to mix. Combine your peanut butter with the honey and vanilla extract.

This is what your coconut flakes should look like toasted. They are a light brown on the top and edges and when you stir them, they should look lighter mixed in.

- Step 3: Mix the wet ingredients together well and then add in your dry ingredients, including the coconut flakes on top after they have cooled.

- Step 4: Finish mixing everything together and then form into little balls. Store in the refrigerator. They keep well in the refrigerator for several days and they freeze well for several months.

Hint: If you have a busy season coming up or you are expecting a baby, these are a fantastic make ahead snack to freeze in small containers and get out just a few at a time. Once thawed, they taste just like they do fresh.
Substitutions
You can make tweaks to this recipe to make it your own.
- Honey - instead of honey, you can use maple syrup
- Peanut Butter- Instead of peanut butter, you can use your favorite nut butter.
Equipment
You'll need a sheet pan, a mixing bowl, and an oven.
I love these sheet pans. They are stainless steel and so easy to clean!
Storage
These energy bites stay fresh in the refrigerator for 5-7 days.
They stand up well to freezing for several months. Get them out and pop them in the fridge for a few hours to take the chill off before eating. They are just as good as fresh!
Top Tip
These are much easier to make into balls once everything is cooled. I use a cookie scoop to get the ingredients packed together and I finish making them round with my hands. If I make a big batch, I freeze them on a sheet pan for an hour or so and then bag them up in 10-12 bites per bag. They don't get smooshed this way.
