    One Pan Sourdough Beef Skillet

    This beef skillet with veggies and potatoes is a balanced one pan meal that your family will love. There are so many ways to make this skillet. I'm going to share my family's favorite with you. If you have a large family or you love leftovers, double this recipe. It's definitely not a beautiful food to photograph but it's absolutely delicious.

    This has a delicious sourdough bread like topping. It's almost like a super fluffy pot pie topping. If you are into sourdough, it's super simple and delicious. It adds a nice touch to this meal. I have made a version with chicken and different veggies like broccoli and that was also very tasty. Beef was our favorite though.

    This meal really has it all. It feels like a comfort food but it's a pretty well rounded meal. It has a protein, veggies, potatoes, and a sourdough topping. The seasonings give it a nice flavor. You really could switch up the veggies without it making a big difference in the meal. Use what you have. My favorites are always onion, carrots, and then I do peas or broccoli. This particular time I used peas.

    Equipment

    • Cast Iron Skillet. I swear this adds the extra favor and brown bits that make it so much better.
    • Spatula
    • Measuring Spoons

    • Bowl
    • Whisk
    • Knife
    • Cutting Board

    Ingredients

    • Sourdough Starter, active or discard: You can substitute this for either no breading or a different kind. I have only used sourdough topping.
    • Avocado Oil: For your pan before adding the beef.
    • Ground Beef: Protein base for this meal. I have tried chicken which was also good but we prefer beef in this.
    • potatoes: You can use extra veggies if you don't want to use potatoes
    • Onion: Delicious browning this in the skillet.
    • Peas: Great for little sweet bits of flavor.
    • Carrots: The flavor blends well with everything.
    • Garlic: Don't skip the garlic. Measure with your heart.
    • Salt
    • Pepper
    • Italian Seasoning
    • Cheddar Cheese: We like sharp white cheddar cheese.
    • Eggs: For the fluffy bread topping.
    • Baking Powder

    Instructions

    1. Start by gathering everything you need. Preheat your oven to 400°F.
    2. Get your skillet hot on medium heat with about 1 tablespoon of Avocado Oil
    3. Add in your beef and season with salt and pepper
    4. In a bowl whisk together 2 large eggs, about 1.5 Cups sourdough starter, a teaspoon of salt and and about 2 heaping teaspoon baking powder
    5. Cook, stirring and breaking up frequently, until browned. Remove from Pan and set aside.
    6. While the beef is cooking, Wash and chop up your veggies super small, Peel and dice your potatoes super small and mince your garlic.
    7. Add about 2 tablespoon salted butter to your skillet that the meat cooked in and once that melts add in your veggies and garlic. Cook, Stirring frequently. Add in your salt, pepper, italian seasoning. Continue cooking until almost completely tender.
    8. Turn off the heat, add in your cheese and add the ground beef back in. Give it a good stir to make sure it's completely mixed.
    9. Scoop the sourdough batter over the top of the skillet and place in the oven to bake for about 23 minutes.
    10. Each oven is different, so check on it around the 20 minute mark. The top should start getting a nice golden brown in some spots. You will be able to tell it is done when it looks solid and has a change in color.

    Notes

    • You can use a different bread like topping if you don't have sourdough. You can swap out veggies.
    • Depending on how big your skillet is or what your family likes, you might want to experiment with the sourdough egg mixture. I've experimented with this several times and I have found that we prefer closer to 1 Cup sourdough starter, 2 eggs, teaspoon salt- little less, and about 1.5 teaspoon baking powder.

    Storage

    • This stores well in the refrigerator for up to 3 days in an airtight container.

    Ingredients
      

    Sourdough Topping

    • 1 ½ Cups Sourdough Starter Active or Discard

    Main Skillet

    • 1 Cup Cheddar Cheese White Sharp
